Stokes Restaurant & Bar is a project that was conceived of by 3 friends. Husband & wife team Kirk & Dorothea Probasco joined their good friend Chef Brandon Miller in 1996 to open what they originally called "Stokes Adobe Restaurant". Their vision was to create a dining establishment where guests could enjoy good food, wine & companionship in a warm & inviting setting. After 5 years of successful business & a legion of devoted patrons, their vision has indeed become reality in what they now call "Stokes Restaurant & Bar".

The highlight of any trip to Stokes is definitely the food. Chef Brandon Miller's rustic California-Mediterranean style food is simple & robust, concentrating on the full flavors of quality seasonal products. Local producers of vegetables, fruits, meats, & cheeses are highlighted whenever & wherever possible. Chef Brandon's innovative menu combines the influences of northern Italy, southern France & Spain. Who could pass up the opportunity to enjoy flavorful Spanish style tapas, rustic pizzas from the wood-burning pizza oven, savory soups, fresh salads & fish, pastas, steak, lamb, duck�ahhh�the possibilities are endless, and delicious.

To provide the perfect backdrop for Brandon's rustic food, the group chose the historic Stokes adobe, a landmark building in the heart of downtown Monterey. This beautiful 1833 building had the raw charm and potential ambiance that the trio envisioned. They needed only to fine tune the interior, which they were able to do in the spring of 2001. Booths & banquets were added to bring more intimacy to the dining space, but it was the truly inspired interior painting by artist Daniel Peterson that brought their vision into full focus. His "distressed renaissance style of ornamental painting" instilled the building with the sun-drenched warmth of an aged Mediterranean villa. Daniel describes the look as "a Mediterranean villa gone to seed." Ah yes, but in a good way.
